Zucchini Recipe

Zucchini Meal


A simple vegetarian meal with zucchini, tomato, onion and garlic. Bon appetit!

Yield: 2 servings


  • 2 zucchinis
  • 2 tomatoes
  • 1/2 onion
  • 3 cloves of garlic, minced
  • 4 tablespoons of olive oil
  • Garnish: chopped parsley or dill


  1. Cut off both ends of zucchinis and peel them. Cut them in two pieces lengthwise, and then cut horizontally in pieces (less than ½ inches). Cut tomatoes in little pieces, and onions julienne. Set aside.
  2. Heat the olive oil in a pan. When the oil is warm, add zucchinis, tomatoes, onions and minced garlic all together at the same time. Cover the lid and cook for about 10-15 minutes on medium heat.
  3. Place on a service plate. Sprinkle chopped dill or parsley. If you like spicy, you can add chili pepper and black pepper.
  4. Keep in the fridge and serve when cold. Preferably, you can also serve warm.
