Spinach Saute


Another easy recipe we made with only few ingredients. Spinach is rich in iron and the saute overall has very low sodium.

Yield: 2 servings


  • 1 lb. spinach
  • 1/2 onion
  • 1 red bell pepper
  • 1 tomato
  • 1/4 cup corn
  • 1/4 cup olive oil


  1. Heat the olive oil in a pan. When the oil is warm, add onions and cook until they soften.
  2. Add red bell peppers and stir for 3 minutes. Add spinach, tomato and corn. Cover the lid and cook for 10-15 minutes in low heat.
  3. If you already have cooked black lentils at home, you can add them to this meal for extra flavor and nutrition. Cooked chick peas (from low sodium cans) can also be used for the same purpose.
