Shrimp with Noodles Recipe

We combine throughly washed shrimps with noodles and add few vegetables and spices to make this easy yet delicious meal.
Yield: 2 servings
Ingredients
- 1 lb. noodles
- 1/2 lb. uncooked baby shrimp
- 1/4 lb. broccoli
- 2 green peppers
- 2 red peppers
- 1/2 onion
- 2 sticks of green onions (white and green parts)
- 1/2 lb. mushrooms
- 2 cloves of garlic
- 3 tablespoons of low sodium soy sauce
- 2 tablespoons of oyster sauce
- Hot chili pepper to taste
Directions:
- Cut mushrooms, green and red peppers, onions into 1-inch pieces. Set aside.
- In a large saucepan, bring 4 cups of water to boil. Add the noodles. Cook, stirring gently to separate for about 5 minutes, until the noodles are tender but still firm to bite. Drain the noodles.
- Heat little bit of oil in a large pan and add noodles. Fry until it turns a little bit of golden but not too dry.
- Heat a wok or skillet and add oil. When the oil is hot, add shrimp. Cook until shrimp turns pink, about 2 minutes.
- Add chili pepper and garlic, stir for a minute. Add onions, red and green pepper, green onions, and mushrooms. Add soy sauce and oyster sauce. Stir-fry all together until well mixed and cooked.
- Add the cooked noodles into the wok. Mix them all together, stir-fry for 1 - 2 minutes to heat everything through. Serve hot!
