Risotto Recipe

Risotto is a classic Italian dish made with cooked rice and broth. There are many versions of this delicious dish. In our version we used chicken broth and table wine.
Yield: 6 servings
Ingredients
- 1/2 cup of rice
- 2 1/2 cups of boiling water or chicken/beef broth
- 1/2 cup of table wine
- 1/2 onion, finely chopped
- 4 tablespoons of olive oil
- 1 cup of mushrooms, thinly sliced
- 1/2 cup of parsley
- 1/3 cup of freshly grated Parmesan cheese
Directions:
- Place the rice in a bowl and fill the bowl with hot water. Soak it for 15 minutes. Then drain the water and set aside.
- Chop the onions fine and slice the mushrooms thin, set them aside.
- Heat the oil in a medium size stockpot, add the chopped onions and cook until they soften (for about 3 minutes). Add the mushrooms, stir until they soften as well.
- Add hot chicken broth (or water) and wine. Add rice and stir.
- Stir continuously until the liquid is absorbed and the rice is al dente (about 15 minutes).
- When rice is cooked, add parsley or parmesan cheese and serve.
