Risotto Recipe



Risotto is a classic Italian dish made with cooked rice and broth. There are many versions of this delicious dish. In our version we used chicken broth and table wine.

Yield: 6 servings


  • 1/2 cup of rice
  • 2 1/2 cups of boiling water or chicken/beef broth
  • 1/2 cup of table wine
  • 1/2 onion, finely chopped
  • 4 tablespoons of olive oil
  • 1 cup of mushrooms, thinly sliced
  • 1/2 cup of parsley
  • 1/3 cup of freshly grated Parmesan cheese


  1. Place the rice in a bowl and fill the bowl with hot water. Soak it for 15 minutes. Then drain the water and set aside.
  2. Chop the onions fine and slice the mushrooms thin, set them aside.
  3. Heat the oil in a medium size stockpot, add the chopped onions and cook until they soften (for about 3 minutes). Add the mushrooms, stir until they soften as well.
  4. Add hot chicken broth (or water) and wine. Add rice and stir.
  5. Stir continuously until the liquid is absorbed and the rice is al dente (about 15 minutes).
  6. When rice is cooked, add parsley or parmesan cheese and serve.
