Honey Chicken Meal


Pairing contrasting tastes in a dish is exciting, especially when the outcome is superior with the unusual ingredients. This is what we tried to achieve by combining lime juice, honey and chicken on the same plate! As usual we have not used any salt or salty foods in our recipe..

Yield: 4 servings


  • 1 tablespoon of honey
  • 4 chicken legs (drumsticks)
  • 1 tablespoon of olive oil
  • 1/2 tablespoon of ginger
  • 3 gloves of garlic, minced
  • 2 tablespoons of lime juice
  • 1 teaspoon of black pepper


  1. Combine olive oil, honey, lime juice, ginger, garlic and black pepper in a large bowl. Add the chicken legs. Refrigerate them for 2 hours (or overnight if you like).
  2. Preheat the oven to 375 degrees F.
  3. Place the chicken legs (skin side up) in the baking pan, pour with its juice. Cover the pan with aluminum foil. Bake for 40 minutes.
  4. Remove the foil and then raise the oven temperature to 400 F. Bake for 5-10 minutes until the chicken skin gets brown.
  5. Serve the chicken with black rice or potato or pea puree.
  6. Note: Soy sauce is usually used in this recipe. However, since most soy sauces have high sodium or MSG we prefer to use lime juice instead.
