Chicken and Colorful Peppers


This is basically a tasty chicken dish with vegetables. We used colorful peppers to make the dish look more presentable besides adding more taste.

Yield: 2 servings


  • 1 lb. chicken (breast or thighs)
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/2 red onion, medium size
  • 1/2 lb. mushrooms
  • 5 broccoli florets
  • 4 kumquats (tiny oranges)
  • 4 tablespoons of olive oil
  • 1 garlic clove (minced)
  • 1 teaspoon of hot chili pepper (or cayenne pepper)
  • 1 teaspoon of black pepper


  1. Cut mushrooms, green, red and yellow peppers, red onions into 1-inch pieces. Cut kumquats into half. Set them aside.
  2. Heat the olive oil in a large saucepan. When the oil is hot, add chickens, and cook them about 10 minutes. Stir them often.
  3. Add garlic, hot chili pepper and black pepper. Stir for 2 minutes.
  4. Add onions, red, yellow and green pepper, and mushrooms. Add kumquats and broccoli. Stir all together until well mixed. Cover the lid and cook about 10 minutes on medium heat.
  5. Serve hot.
