Bulgur Salad


Kisir is a traditional Turkish side dish made from fine bulgur, parsley, tomato paste and few other ingredients (see below). The main ingredient, bulgur, is a cereal food generally made from parboiled durum wheat. For kisir, a finely grounded bulgur, unlike the coarse bulgur used for pilavs, is used. Bulgur can be found at Turkish, Italian and Middle-Eastern grocery stores.

Yield: 6 servings

Main Ingredients

  • 1 cup of fine bulgur
  • 1 cup of boiling water
  • 1/4 cup of extra virgin olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 1 tablespoon of pomegranate paste (sweet and sour sauce)
  • 2 tablespoons of lemon juice (you can add 1 table spoon more, if you like sour)

Spices (flexible amounts)

  • 2 teaspoons of cumin
  • 2 teaspoons of oregano
  • 2 teaspoons of peppermint
  • 2 teaspoons of black pepper
  • 2 teaspoons of cayenne pepper or paprika

Herbs (flexible amounts)

  • 3 green onions, chopped
  • 1/2 bunch of fresh Italian parsley, chopped
  • 1/2 bunch of fresh mint leaves, chopped (optional)
  • 1/2 bunch of fresh dill, chopped (optional)


  1. Put the bulgur in a large bowl, pour one cup of boiling water. Cover the bowl with a lid or towel and set aside for 15 minutes until all of the water is absorbed.
  2. Add finely chopped onions, garlic, olive oil, tomato paste, pomegranate paste, lemon juice and mix them well with a spoon.
  3. Add the spices to your taste and mix them again.
  4. Lastly, add all the herbs, mix them all together one more time.
  5. Place the kisir in a serving plate and serve cold.
