Asparagus Salad


Of all fruit and vegetables that have been tested, asparagus has the highest amount of the phytochemical - glutathione, a potent anti-carcinogen and antioxidant. Asparagus is also high in Vitamin B, potassium, and fiber. Therefore, we prepared the following easy recipe using asparagus with few other healthy ingredients. It should take less than 15 minutes to prepare the salad. Enjoy!

Yield: 2 servings


  • 1 bunch of fresh asparagus
  • 4 tablespoons of extra virgin olive oil
  • Juice of 1 lemon
  • 1 glove of garlic, minced (optional)
  • 1 teaspoon of black pepper


  1. Thicker asparagus spears can be chewy and woody; the bottoms will need to be trimmed or cut off. Rinse them under cool running tap water, and then cut off the bottom inch or two of the asparagus.
  2. Fill 2/3 of the stockpot with water and bring to boil. Then add the asparagus and continue boiling until they are tender (about 5-8 minutes). Cooking time varies depending on the thickness. Be aware that asparagus can get overdone easily so check its status often while boiling.
  3. Remove the asparagus from hot water, and drain them under cool running tap water. Let them cool slightly.
  4. Place the asparagus on a service plate. Combine olive oil, lemon juice, black pepper, and garlic in a small container and mix them well. Pour this sauce on the asparagus. Serve it cold.
