Asparagus Soup


Did you know that asparagus is a great food to make healthy meals? It is rich in vitamins A, B1, B2, B6, C, potassium, calcium and folic acid. It has also low sodium, calories and zero cholesterol. You can make healthy soups with asparagus by following the recipe below. Enjoy!

Yield: 4 servings


  • 2 cups of low sodium chicken broth (or water for lower sodium)
  • 1 pound of asparagus
  • 1/2 mid-size onion
  • 2 tablespoons of olive oil
  • 1 tablespoon of flour
  • 1 tablespoon of unsalted butter
  • 1 teaspoon of lemon juice


  1. Cut the heads of asparagus and keep them to garnish the soup later.
  2. Cut the rest of asparagus into one-inch slices. If asparagus ends are hard, do not use them in the soup.
  3. Slice the onion very thin and fry them in a pan with olive oil.
  4. Once the onions are yellowish, add the sliced asparagus in the pan. Stir the mixture few times and then pour the chicken broth (or water) in.
  5. Heat the mixture until asparagus gets soft (for ten to fifteen minutes).
  6. Take the mixture out of the pan and blend it in a blender. Be careful while blending the hot mixture!
  7. In a pan, heat flour in unsalted butter until the flour looks pink. Then add the blended mixture in the same pan.
  8. Continue simmering for five minutes.
  9. Add lemon juice in the soup and enjoy your soup!
  10. Remember the asparagus heads you saved?! If you like, you can blanch them and use them to garnish the soup before serving it in cups (as shown in the picture above).
