I guess I need to mention at this point that high sodium intake contributes to water weight and gives you a misleading number on the scale. More importantly your body becomes more susceptible to kidney stones and high blood pressure.

Please note that most weight loss foods have high amounts of sodium. You cannot get slim by eating foods in high sodium even if they are low in fat!

Our sodium intake comes mostly from salt as well as MSG which is high in baking powder and food and drink additives.

To lose weight you need to eat natural foods. You need to cook fresh meat and drink plain water and fruit juices, instead of eating processed foods high in salt.

The main purpose of following a low sodium diet is not loosing weight, however it is well known that retaining less sodium in body definitely helps someone also retain less water. Therefore, people who cut on their salt intake tend to drink less water, hence keeping less weight.

The body tries to keep sodium in blood in a certain range. If you consume more sodium than your body needs, you will get it out of system through sweating, restroom visits, etc. The body will need more water (you will feel thirsty more often) to dilute the sodium content.

Considering that majority of the human body's weight is water, consuming less sodium is significant to being light!

Only 250 mg to 500 mg of sodium a day are required by humans for normal function of the heart and other organs. This level of sodium helps maintain blood pressure, nerve function, normal muscle impulses and the body's correct balance of water and minerals.
For the body to perform these actions, the minimum amounts (mentioned above) of sodium should be consumed.
The good news is if we cut out all salt and eat a balanced diet, we will get enough sodium. Nearly all food has some sodium in it.

Also please note that some people following low sodium diet use Featherweight Baking Powder, and Herb-ox Low-Sodium bullion as they both have potassium (featherweight has potassium bicarbonate. Herb-Ox has potassium chloride).

Some food processors use "hydrolyzed proteins" to enhance flavor. These hydrolized proteins contain MSG, which is the sodium salt of glutamic acid (a building block of proteins).

Since FDA does not require food processors to report MSG in their nutrition labels, you have to check ingredients section of the food packaging and see if it has any "hydrolyzed proteins".

African Americans and elderly are more likely to be salt sensitive than younger white adults. The good news is for many people an increase in dietary potassium is enough to suppress salt sensitivity. So it is advised to eat more fresh (not canned, or processed) fruits and vegetables.

DASH stands for Dietary Approach to Stop Hypertension. It is developed by the National Heart Lung and Blood Institute of America. This diet emphasises high intake potassium and low intake of sodium (along with low intake of fat and animal based proteins).
Therefore DASH dieters consume a lot of fruits and vegetables because these foods are high in potassium and magnesium, which we need for blood pressure regulation and control.

There are many ways to lower your sodium intake. Here below are a few:

Choose fresh food items. If you have to choose canned foods, choose the ones without added salts. Examples: Unsalted nuts, dried beans and lentils.
Add less 'canned' vegetables to homemade dishes.
Select fat-free or low-fat milk, low-fat cheeses, as well as low-fat yogurt as low fat versions tend to have lower sodium as well.
When you dine out, tell the waitress how you want meals prepared. Ask for your dish to be prepared without salt.
Use spices and herbs, instead of salt to enhance the taste of your food. If you are using mixed spices, make sure the spice mixture does not have high sodium.
The last but not the least, make a habit of reading nutrition labels.

The Department of Agriculture has a database of nutrition content for food products. I would like to share with you the link to this database so you can check the sodium content of the food products you are curious about. This way you don't have to run to the grocery store to check nutrition labels :-)

It is less than 2,400mg per day for a healthy person. If you exercise or do physical work a lot than this limit can be little higher (up to 3,000mg per day I heard), but
most hypertension, heart patients should keep their intake less than 2,000mg. Please also note that too low sodium is also bad. If you are consuming less than 500mg per day then you may want to increase your sodium intake a little. This must be easy to do, considering a teaspoon has 2,300 mgs of sodium.

This is from Miami Children Hospital's magazine in Volume 9, No:2

"The incidence of kidney stones in children has been increasing steadily in America over the last decade..."

The first reason mentioned in the article is Salt! The article reads:

"Excess salt is contained in many foods that children love and eat now more of than ever before, such as french fries, cheeseburgers, and potato chips. In addition, with today's prepackaged, quick-meal mentality, parents may not be aware that many convenient foods such as lunch meats, packaged meals, canned soups, and sports drinks, contain high levels of hidden salts."
